Easiest cookies EVER!!!

Well, hello Saturday! In our house we love Saturdays. It is Hockey day! We load up the car and head into Downey Park & I get to watch my chickadees play the same sport that I used to play, (before I became to old to wear a short skirt with my dignity intact!!) Miss G got to have a break today, her team had a well deserved bye. Miss K however ran her little butt off & even scored a goal!  I enjoyed the sunshine & Miss G enjoyed being ale to play with a very cute puppy that was brought along to watch the game!!

So after the drama with my blog yesterday I am finally able to share with you the easiest cookie recipe EVER!!!
All the mixing is done in a food processor. I had my chickadees taste test these & Miss K informed me that they are "bloody good!" She is the daughter of a trucker!!! LOL!!! I had the dough done while they were at school, chilled it in the fridge till they got home. It was a nice way to spend a Friday afternoon & the house smelled delicious  all night! So here goes.....

Ingredients
125g of butter/margarine
1/2 cup of caster sugar
1 teaspoon of vanilla essence
1 egg
1 cup of Self raising flour
1 cup plain flour
pinch of salt
50ml of milk

In a food processor, mix butter, sugar & vanilla until light & fluffy.
Add all the other ingredients, except the milk, & mix until it resembles large breadcrumbs.

With the motor running, drizzle the milk through the top spout until the dough forms a ball.

Wrap the dough in glad wrap or freezer bag & chill in the fridge for at least half an hour. The longer you leave it, the better. It is firmer to work with when lifting the shapes.
When you are ready to make them, preheat your oven to 180 degrees. On a lightly floured surface, knead it well. Add a sprinkle or 2 of more plain flour at this stage if it becomes to sticky & work it in well.

On a piece of baking paper. roll out the dough to about 1/2 cm thick. If it is too thin it will be hard to lift the shapes.
Cut out shapes with cookie cutters. I like them to be a decent size. The cookie cutter that we used was around 9cm across.

Place the cut out cookies on to baking trays, lined with baking paper. Remember to leave about 2cm between each cookie as they do spread, just a little.
Bake at 180 degrees for around 15-20 minutes (oven times may vary) or until lightly golden on top. Cool on the trays for 10 minutes.
Transfer to a wire rack for cooling. When completely cool, decorate as you wish

I decorated ours with royal icing, sprinkles & a choc chip on each.

These cookies are definitely for the cookie lover!!! I don't think they will last long in any household!!

Well, we are going to kick back & watch Tangled this afternoon. I am looking forward to my husband returning home tomorrow. But it does mean that I need to mow the lawn when the movie is finished. Then tomorrow we are able to spend the day as a family doing whatever we want. Enjoy your weekend!
